TRADITIONAL METHOD

 

Would you believe that the ‘Traditional Method’ of creating sparkling wine was first discovered in England? That probably explains why we love our bubbles so much!

 

The French perfected the method and it is the only way you can make Champagne. Similarly, the strict cava regulatory body (the ‘D.O.’) says that Codorniu can only make its cava by this same method.

 

Unlike other, less labour-intensive ways of making a wine sparkle, the ‘Traditional Method’ is a detailed and long process for wine making that ensures fine, persistent bubbles in your glass that will definitely last longer than it takes to enjoy a flute of Codorníu.

 

Cava was known as 'Xampagnet' in Spain until 1970 when EU regulations declared that it should be called something else.  The word ‘cava’ was chosen as it denotes the underground cellar where ageing takes place.

 

Today, the Cava D.O. tightly controls all aspects of production, including grape selection and ageing. At Codorníu we have worked with the D.O. over the years to allow some of the international grape varieties, such as Chardonnay and Pinot Noir, to be allowed within D.O. certified cavas and be blended with the indigenous varieties. We believe Chardonnay and Pinot Noir grapes produce fantastic sparkling wines that are fresh, lively and suit consumer tastes around the world.
