INNOVATION AT CORDORNÍU

With a history of more than 450 years, Codorníu has always been at the forefront of winemaking excellence by innovating year after year to craft the best quality wines and cavas.

  • In 1872, our winemaker at the time, travelled to France to learn the ‘Traditional Method’ of sparkling wine production. On his return to Spain, he created the first cava and the drink we all know and love was born.
  • In 1983, Codorníu was the first Spanish winery to create a cava using Chardonnay grapes.
  • Later in 2001, Codorníu released the first ever rosé cava made from the esteemed Pinot Noir variety.
  • Today Codorníu is again at the vanguard, recently crafting the first ever cava to be made as a ‘Blanc de  Noirs’ style – made famous in the Champagne region –  a white sparkling wine, made from black grapes.

When we talk about innovation, we use the analogy of gold mining - if you dedicate all your time searching for the big headline gold nugget, you miss the small flecks that you walk over every day.

It’s the small flecks that make up the majority and need refining. That’s exactly our approach, because if we focus on the large nuggets, we will miss the majority of the everyday opportunities to constantly improve our cavas.

In reality this is how Sparkling Wine production has evolved throughout its history - the big nugget was someone putting sugar and yeast in a bottle and sealing it, since then we have been refining that idea through constant learning and questioning and we are the forefront of that thinking among sparkling winemakers.
